What is Maitake?

Maitake (Grifola frondosa), meaning "dancing mushroom" in Japanese, is a choice culinary mushroom that grows at the base of oak trees. Legend says people danced with joy upon finding it due to its value. It's both a delicious edible and a potent medicinal.
